Sweet Potato Salad Recipe
Ingredients You Will Need
- 3 cups peeled and diced sweet potatoes
- 1/2 cup diced red onion
- 1/2 cup diced celery
- 1/2 cup diced bell pepper
- 1/2 cup diced cucumber
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 tablespoon honey
- 2 tablespoons chopped fresh parsley
- Salt and pepper, to taste
Instructions
Step 1: Prep the Sweet Potatoes
Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper. Place the diced sweet potatoes on the sheet and lightly spray with oil. Bake for 15-20 minutes, or until tender.
Step 2: Make the Salad
In a large bowl, combine the cooked sweet potatoes, red onion, celery, bell pepper, and cucumber. In a separate bowl, whisk together the mayonnaise, mustard, vinegar, honey, and parsley. Pour the dressing over the salad and stir until everything is evenly coated. Add salt and pepper to taste.
Step 3: Serve
Serve the salad chilled or at room temperature. Enjoy!

This dish can be served as a main dish or as a side. Try adding cooked bacon, boiled eggs, or other vegetables for a more filling meal.
