Ingredients
- 2 pounds of beef chuck, cut into cubes
- 3 tablespoons of olive oil
- 1 large onion, diced
- 3 cloves of garlic, minced
- 1 teaspoon of cumin
- 1 teaspoon of oregano
- 1 teaspoon of smoked paprika
- 1 teaspoon of chili powder
- 2 cups of beef broth
- 1 can (14.5 ounces) of diced tomatoes, undrained
- 1 large potato, peeled and cubed
- 1 large carrot, peeled and sliced
- 1/2 cup of frozen peas
- Salt and pepper to taste
- Chopped fresh parsley, for garnish (optional)
Instructions
- Heat the olive oil in a large pot over medium-high heat. Add the beef cubes and cook for about 8 minutes, stirring occasionally, until the beef is browned.
- Add the onion and garlic and cook for 5 minutes, stirring occasionally.
